Recipe

Hey All. This week is a recipe I recently came across. We've had it several times already because it's just so good! It's a great pork chop recipe with a yummy sauce.

First put a large skillet over medium heat. Pour a little extra virgin olive oil in and let that heat up. Take your pork chops, how ever many you want, and season them generously with salt and pepper. Cook them to your preference. Meanwhile, whip up this Apricot Mustard sauce.

1/3 cup sour cream
1/3 cup Dijon mustard
2 tbsp apricot jam

Stir all ingredients together until well blended. This can be served with either pork or chicken. Also, I usually less Dijon to make it a bit creamier. It's all up to you though. Enjoy!

Sounds like a quick after work recipe, I'll have to try it. So the sauce doesn't go in the pan with the chops? You just serve it along side at room temp?

Yes, it's quick and easy. No, the sauce doesn't go in the pan. I whip it up while the chops are cooking. It's not at room temperature. I like it cold. You could serve it at room temperature if you wanted.
