Things are a little crazy

Hello all! Things are slightly crazy around here lately! We've been super busy trying to keep up with life's demands. I haven't gotten a new recipe out yet, but I shall include it today!
The cats have been adding to the craziness. I'm not sure what's gotten into them lately. Boomer has been feeling rather feisty lately...which is not like is usual loving self! Maggie is usually the feisty one! They have seemingly switched personalities! He has been enjoying tackling and biting her, smacking at Phoenix, opening all the cupboard doors, climbing on everything, and playing with anything he can get his paws on! This morning I witnessed a rather funny sight. I was sitting on the couch eating breakfast, and looked over just in time to see Boomer soar up the side of the bookcase. He was trying to jump on top but didn't quite make it! He managed to grab onto the side and was hanging for several seconds. It was pretty amusing. I wish I would have had a camera ready!
Maggie hasn't excluded herself from the fun! The other evening Richard had taken Phoenix outside and was coming back in the sliding glass door. It was open and he was outside getting Phoenix, when Maggie decided she wanted to go exploring and went running out the door!! I immediately grabbed kitty treats and Richard said once she got out there she realized she didn't want to be out there in the dark and cold! She was terrified and thankfully he moved out of the doorway and she went zooming back inside! We're just thankful she didn't run off!
I doubt we would have ever found her in the dark if she had!
I'm thinking about sharing funny work stories. I get some pretty interesting characters calling in and talking to me. I've been left speechless a couple of times.
Anyhow, it's hard to believe Easter is only 9 days away! We will be heading down South to visit with my family for a couple of days. We're excited about that. Other than that I can't think of a whole lot more.
Here's my not so weekly recipe. It's a cinch and super easy. I'm actually including the full meal, just because it's so so good. It's a lovely pork chop recipe with potatoes and carrots.

Dijon Pork Chops and Oven Potatoes Dinner
1 lb potatoes, cut into bite size chunks
1/4 cup Italian Dressing
4 pork chops
4 tsp Grey Poupon Dijon Mustard

1. Preheat oven to 375 degrees.
2. Toss potatoes with dressing. I just kind of eye it. I know I use more than a 1/4 cup. Place in a glass bowl and microwave on high for about 7 minutes. Stir once or twice in between. I also throw in some more dressing while I'm stirring.
3. Spread chops with mustard and place on a foil lined baking sheet. Once the potatoes are finished arrange them around the chops.
4. Bake 30 minutes or until chops are cooked through and potatoes are tender.

I also serve brown sugar carrots with this and it makes for a lovely dinner. I simply steam the carrots, then place a little butter and brown sugar and let that melt down over the carrots.

You get an absolutely delicious meal! Enjoy!

I've Moved

Hey All! I've finally left Yahoo behind! That site was driving me crazy! Hopefully I can figure this thing out soon. It shouldn't be too hard right? LOL! Richard will more than likely end up helping me. I'd like to think of myself as tech savvy, but let's face it...it's just not so!
So anyways, just wanted everyone to know I'd finally made the move. I hope you guys will join me!!

Not So Weekly Recipe

Hey All, I remembered today that I had neglected my weekly recipe yet again! So here goes. This week's is a scrumptious pork chop recipe. I think everyone who has ever had these loves them, and they are so simple! My favorite way to do things! They go perfectly with mashed potatoes and yummy veggies.

Italian Style Pork Chops

2 cups Saltines/Ritz, crushed

1 1/3 cups Parmesan cheese, grated

2 tsp Italian style seasoning

2/3 cup butter, melted

4 pork chops

Directions:

1. Preheat oven to 425 degrees. This will vary, I usually bake them at 400 degrees.

2. In a medium bowl combine the crackers, Parmesan cheese, Italian seasoning, and butter.

3. Place the chops in a baking dish, or on a bakig sheet. Then spoon the mixture over each pork chop.

4. Bake for approximately 30 minutes, or until internal temperature reaches 160 degrees.
