Alright people, I'm trying to get it together over here! Haha! I just despise Yahoo so much, it's aggravating trying to get on here and blog or read blogs. I so need to set up my Blogger account.
Onward and upward....things have been busy around here. I'm trying to keep up with work and everything else. I've neglected my weekly recipe so here's one. Better late than never I suppose!
These are some yummy biscuits. Richard and I love them, and they are super easy.
Bacon and Tomato Cups
Ingredients:
8 slices bacon
1 tomato, chopped
1/2 onion, chopped
3 oz Swiss Cheese, shredded
1/2 cup mayo
1 tsp dried basil
16 oz can refrigerated buttermilk biscuit dough (Grands)
Directions:
1. Preheat oven to 375 degrees. Lightly grease a mini muffin pan.
2. Cook the bacon until evenly brown, then drain on paper towels. Crumble bacon into a medium mixing bowl and add tomato, onion, cheese, mayo and basil.
3. Separate biscuits into halves horizontally and press each half into the cups on the prepared muffin tin. Fill each half with the bacon mixture.
4. Bake for 10-12 minutes, or until golden brown.

Little Update
Well, it seems that I am completely unable to keep up with this blog as of late.
I didn't even get a Valentine's recipe up! Shame on me! It also doesn't help that Yahoo is having serious problems. It's driving me crazy! I just need to find time to head over to Blogger and start up a page there!
Anyways, Richard and I have been going, going, going! We had a nice Valentine's Day yesterday. We were both off so we spent the day together. We ended up running some errands then going to the Cheesecake Factory for a late lunch/early dinner. He had a nice basil cheese pizza and I had my very favorite Barbeque Chicken Salad! YUMMO! We finished it off with the best Tiramisu ever!
We walked around the Town Center for a short bit, then headed out.
We ended up renting a movie and heading home and relaxing the rest of the evening.
In other news, we had a visitor for a short while. This past Tuesday I had noticed an unfamiliar dog hanging around. He was short and cute and very friendly. He spent most of the day in front of our house, then when Richard came home the dog proceeded to hang out with us and head into the garage!
We were under a tornado watch and it was getting stormy, so we brought him out back and fed him. He didn't have a collar or anything and since he had been hanging out all day, I figured he had gotten loose from somewhere, as he looked well taken care of.
Richard called Animal Control and they weren't able to come out for a couple of days, so "Shorty" stayed in the backyard. We looked for Lost signs and Animal Control scanned him for a microchip, but to no avail. Thursday we decided to let him hang out in the backyard, as Animal Control could not promise he wouldn't be put down. He was way too sweet for that. I had decided to make up Found fliers and blanket the neighborhood. Unfortunately though, when we came home Thursday evening Shorty was gone. We're not sure if he dug out, as there was a spot in the fence that had some dirt thrown around, or if someone saw him and took him. Hopefully he found his way back to his owner.
Well, I need to go clean my house and make a phone call so I will scadaddle. I hope everyone had a lovely Valentine's Day! Enjoy your weekend!
